Instant Wheat Dosa Recipe (Crispy Atta Dosa) – No Fermentation, No Fuss!

Also known as Atta Dosa or Godhuma Dosa in Tamil Nadu homes, this is one of the most underrated South Indian breakfast . Perfect for those lazy Sunday mornings or hectic weekdays when you want something hot and healthy on the table — fast!

So... What Exactly is Wheat Dosa?


Wheat Dosa, also known as Godhuma Dosa or Atta Dosa, is a no-fuss South Indian crepe made with whole wheat flour and rice flour. The best part of Wheat Dosa is There is No soaking, no grinding, and definitely no fermentation headaches.


It’s the cousin of the traditional dosa — crispy on the edges, soft in the middle, and packed with that warm, rustic flavor. Perfect for those busy mornings or lazy nights when you want something homely, quick, and totally desi and tastyyyy.


You can make it.

Soft and thick (like kal (stone) dosa)

Or crispy & lacy like rava dosa (which is what we’re doing here 😉)


Ingredients You’ll Need:


Ingredient Quantity

Whole wheat flour (Atta) 1 cup

Rice flour ¼ cup

Water ~2 to 2.5 cups (adjust as needed)

Onion (finely chopped) 1 medium

Green chili (finely chopped) 1–2, adjust to taste

Grated ginger 1 tsp

Cumin seeds (Jeera) ½ tsp

Salt To taste

Curry leaves & Coriander leaves 2 tbsp, finely chopped

Oil or Ghee For cooking


How to Make Instant Wheat Dosa (Step-by-Step)



🔹 Step 1: Let’s Whip Up the Batter

Take a big mixing bowl and throw in your wheat flour, rice flour, a pinch of salt, and some jeera (that’s cumin seeds, btw).


Now slowly add water — little by little — and start whisking. You're aiming for a thin, watery consistency… kinda like buttermilk. Not too thick, not runny like water.

Once you’ve got that sorted, toss in your chopped onions, green chillies, a bit of grated ginger, and those lovely curry + coriander leaves.
Give everything a very good mix.

Let this sit for 10 minutes at least, it helps the flavors come together and makes your dosas cook better too.

🔹 Step 2: Now, Cook the Dosa

Heat a cast iron / non-stick tawa.
Note, It should be hot, but not smoking.

Mix the batter (it settles fast) and pour from a height, starting from the center and moving outwards — just like rava dosa.

Don’t spread with the ladle. The batter will naturally form holes and spread out.


Drizzle some oil/ghee around the edges.

Cook till bottom turns golden brown and crispy. Flip and cook the other side if needed (or skip flipping if it’s thin).

Serve hot!

Wheat dosa pairs beautifully with:

Mint chutney

Tomato chutney

Coconut chutney

Peanut podi 

Garlic podi + ghee

A hot bowl of sambar


Batter consistency is key.
It should be watery for crisp dosas. Thick batter = soft dosas.

Stir the batter every time before pouring – flour settles fast.

Always pour from a little height to get lacy edges.

Finely chop onions – large chunks will leave the dosa uncooked in spots.


Non-stick or seasoned iron tawa works best.
